- „This is a skill that is mastered after many years of working on the farms. The higher the altitude of the farm, the slower the new growth develops. The rainy season has started here and it has awakened the coffee trees. This is one of the most beautiful stages of the coffee process. Flowering coffee trees are a stunning spectacle. The main flowering only last 2 to 3 days and after that we will see around 2 more flowerings, which are not as intense. When the main flowering is at its pinnacle, Mauritania looks like it has been hit by a snowstorm. Arabica coffee plants are primarily self-pollinating, but bee pollination is much more important than we thought. Bee pollination can double a coffee crop’s yield. These busy bees help us on our farms by turning each flower into healthy cherries, usually containing two coffee beans each. Of course these “workers” don’t get the recognition they deserve. As the flowers begin to fall, tiny coffee cherries begin to emerge. Now we let nature take its course. In next month’s issue, I will share with you the replacing and pruning of the shade trees, how we make our natural compost, and I will give you an update on the size of the coffee cherries.
