The recipes published in The hM NUTRITION JOURNAL come in two versions: one for heart - cardiac patients and one for diabetic patients. We try to follow the principles below:

- 1) Provide a low total fat content and a very low saturated fat content, - 2) Provide a cholesterol-free or very low dietary cholesterol content, - 3) Promote the use of unrefined whole grains as sources of carbohydrate, - 4) Encourage the intake of leaner protein - legumes, soy, ultra lean meats, - 5) Promote a higher intake of vegetables and fruits, - 6) Promote a higher fiber intake.

For heart or cardiac patients, we try to keep the percentage of calories derived from fat at the 15% level or below. This level may seem very low but is in accordance with the heart disease reversal principles advocated by leading heart specialists like Drs. Esselstyn, Gould and Ornish for fat content (1). Speak with your doctor or dietitian to make sure this is suitable for you. For diabetic patients, we substitute unrefined whole grains in lieu of refined white flour products. We also increase the proportion of veggies and fiber.

The recipes presented are modified recipes inspired from old American favorites. These traditional recipes often come with a very high total fat and very high saturated fat content. They have, most of the time, a poor fiber and a poor vegetable content. Most recipes can be modified so as to offer a content suitable for cardiac / heart patients and for diabetics: Here are a few examples:

Pizza Americana - Modified for Cardiac and diabetic patients It is mostly plant-based, only 16.9% of calories are derived from fat in the heart health version; 33% in the diabetic version. Burger: Very low-fat and low cholesterol. For heart and diabetic patients. This is a plant-based burger that uses soy or beans as a source of protein. View the YouTube video posted on the page. Only 15% of calories are derived from fat and it is virtually cholesterol-free. Spaghetti Bolognese Style - Modified for Cardiac and Diabetic Patients. Mostly plant based. Fat content is only 16% in cardiac version and 18% in diabetic version.
