Description
Originally from the South West of France, Xavier left school at sixteen to serve an apprenticeship as a waiter in a small restaurant. Over two years of paper tablecloths, a grumpy boss and large scale dinners, he learnt about in house service, bar, wine and fine cuisine.
Full of energy and dedication, he left France in search of adventure; equipped only with his wine opener and his dreams of travel and working at prestigious eateries.
After several years spent travelling and working at major restaurants, such as Monaco’s “Louis XV”, “L’Enoteca Pinchiorri in Florence and collaborating with chefs like Bruno Cerino and Gregoire Sein, he returns to us in the UK a great deal wiser, having learnt to listen to the voice of experience.
