Yes, you can refrigerate the candy. If you freeze the candy, before serving, remove from the freezer and leave in the refrigerator for 24 hours. Remove from fridge and let come to room temperature for another 24 hours before serving.

The caramels are hard only when they are cold. If they are at room temperature they are very soft and chewy.
