Description
We have a herd of 80 milking cows on our organic family farm, which is just outside Tiverton in Devon. The milk is taken from the dairy during the morning milking, pasteurised immediately and turned into cheese the same day.
After the milk has been pasteurised starter and vegetarian rennet are added to form a curd. The curd is cut, and then ladled into moulds. At this stage herbs are added to create the different flavours. The cheeses are left to drain overnight, and with regular turning the whey is expelled to leave a soft, creamy cheese. The cheeses are removed from the moulds and lightly salted to enhance the taste and keeping properties.
The entire process is carried out by hand, the only mechanical assistance coming from the stirrer on the vat during pasteurisation.
