- The Patisserie's opening in the summer of 2004 marks the realization of a dream for local Chef, Joey McLaughlin. Joey began working in the culinary field while he was a high school student at Bishop Kenny in Jacksonville. He gained further experience while in college and continued his formal training at the Cooking School of the Rockies in Boulder, Colorado. After completing a course of study in Provence, France, Joey returned to Jacksonville and sharpened his skills as a chef in Jacksonville's finest restaurants.
