- In the late 1960's and early 1970's, the Kalathas family came to the USA from Greece. Their goal was to establish themselves in the restaurant business. Tom and Charlie worked for their uncle at the Texas Lunch restaurant in downtown Chambersburg until 1972 when they purchased the business. Soon after, they purchased an apartment building next door to expand the seating. This became The New Texas Lunch and The Texas Inn to accommodate large parties. As the years rolled by and with their reputation and restaurant growing, they found a continuing demand for their business.
