Nobu Kidera Owner & Chef for over 22 years Sushi Chef Noboru continues to create Edo-mae style sushi and other various authentic Japanese cuisines to entertain his loyal customers. Noboru Kidera born in Kobe city Japan started his training at the age of 19 by stumbling into a local sushi-ya taken by his father and was drawn to the atmosphere and sushi chef who later became his master. Nobu’s continual inspiration is the desire to provide a small experience of japan when his customers come to eat sushi. 1966 Nobu started to train in Kobe City apprenticing under sushi chef 1972 moved to Hawaii and worked as a sushi chef with his ambitions of seeing new places 1977 moved to New York City working in Manhattan later moving back to Japan for two years training at Kyo-aji restaurant in Ginza district to gain knowledge of Washoku cuisin.
