Thank you for your interest in my online product catalog. I am John Borg, Chef and Knife Merchant. Located in San Diego, California, I have been working in commercial kitchens for almost forty years. My first cook's job was in 1958. From cook to corporate chef, I have used my fair share of knives. By 1965, the knives I had accumulated represented several hundred dollars, which at that time seemed a little fanatical. Today, it is hard to find a chef with less than $1,000 worth of knives!
I started with knives that had wooden handles and were made with a straight carbon steel, a softer alloy that was easy to hone to a razor-sharp edge, and therefore wore out quickly. Another problem with the earlier carbon steel knives was keeping the blade clean. Everything would stain it, acid foods turned it black, and if it stayed wet for any length of time, it would rust. Stainless knives were available at the time, but stainless alloy technology was so poor that is was all but impossible to get and keep these knives sharp.
Times have changed and so have knives, but the basic shapes of the knives have changed very little. They have evolved from centuries of trial and error. The greatest progress has been made in finding the proper balance of vanadium, carbon, chrome, and molybdenum to create the quality finished product. Almost all knives today are stainless steel. Wooden handles are now solid steel with hollow handles sculptured from the same sheet as the blades (Global). The metal can now even be replaced with ceramic blades (Kyocera)!
