Let me introduce myself, I'm Linda Karber, and my family and I have been in the elk industry for 28 years. We are known as the grandparents of the elk industry in South Dakota. The number of elk herds has grown so much over the last 6 years that the market

has changed dramatically. The elk industry now has the animals to support the growing demand for the exceptional meat of these animals. You see by the meat nutrition chart we have included on our website is the most healthy meat for you. It's very low in fat and cholesterol and high in protein. One of the few foods that is good for you and tastes good too!

About 2 years ago I applied for and received a grant from the Governors Office of Economic Development to do a feasibility study on elk meat. The study revealed some very interesting facts about such an industry. Did you know there is over 800 metric ton of red deer venison being imported into the United States from New Zealand? The study also produced a disk that can show elk farmers and prospective elk farmers the cost of starting an elk farming operation and using it as an alternative to their farming and ranching operations. This step was completed the end of 2000.
