Welcome to the Coriander Leaf. This new Asian Food Hub located at the Gallery Evason Hotel, Singapore opened in mid May 2001 to present the best of Asian Cuisine to the culinary world.
The Coriander Leaf is a hub to showcase South Asian, Southeast Asian, Middle Eastern and East Asian cuisine. We will gradually extend our repertoire to incorporate wonderful dishes from different parts of Asia that also fit into a complementary whole. Besides being poised to make its culinary stand as a fine dining bistro, the Coriander Leaf will strive to establish itself as a center for different food-related activities, namely a culinary school, a chef's table and private dining room, as well as takeout, special orders, food and wine tastings, gift hampers bottled chutneys and condiments and table and kitchenwares.
The basic concept is to move beyond the supply-oriented focus of restaurants and bottlers - to make the partcipants not just 'consumers' but 'prosumers' as well, in which they participate in the production process and form part of the food community. We will do food 'interpretations', that is, taking traditional recipes and reinterpreting them to make the foods lighter, easier to prepare and easier to integrate into a nontraditional menu.
