- It all began in the early 1900's when my grandfather, an Italian immigrants son would help his father make traditional cured meats and sausages from the animals they would butcher themselves at the family farm. Never far from working with meat he decided to open a small sausage shop in the side room of a ice cream store in Hackensack, New Jersey. He would make his fresh sausages in early morning hours and then load his truck with them and other provisions for the small butcher shops, delicatessens, and markets throughout New Jersey and metropolitan New York City. Soon the demand for his sausage products grew so much that he eliminated the provision business and began manufacturing full time to produce enough sausage to supply his growing customer list.
