Just in time for entrance into the San Diego County Fair, this is a rebrew of our first all-grain attempt, with a few changes to balance the recipe a bit.
The process
Lots of good news with this batch. First, after process of elimination, we’ve decided to completely ditch the reverse osmosis water from OB Water & Ice. I truly believe that the missing trace elements really have a strong effect on the overall sugar conversion process. Additionally, it just doesn’t seem possible to make CaCO3 soluble enough in order to adequately affect the mash pH. Perhaps RO water would be good for making a pilsner, but it sure hasn’t worked for anything else.
So this time I just purchased an inline GE SmartWater filter and hooked it straight up to the hose. No brewing salts, no adjustments… nada. And whaddyaknow, the best mash efficiency to date (75%). The water tastes sediment- and chloramine-free, which should translate into good beer based on the hardness and alkalinity of San Diego water.
