Our food is a tribute to the Mayan people of southern Mexico. The Maya are the native people of southern Mexico. They inhabited the Yucatan peninsula in what is present day Mexico, Guatemala, Honduras, and El Salvador. The ancient Maya were farmers. They grew corn, beans, squash, avocados, chili peppers, pineapples, papaya, and cacao. The Maya were also the people who built the pyramids in Chichén Itza, Mexico. They created relief sculptures and other art forms to record events and portray their gods. Maya civilization in the lowlands mysteriously collapsed between 790 889 A.D.; however, Mayas continued to thrive in the northern Yucatan peninsula and southern highlands of Guatemala. Maya descendents still live and farm throughout the Maya region.
