Aguila Food Products was founded in 1956 by William Chisum, Sr. and Olga Chisum. The company started as a small bakery and delicatessen specializing in Mexican Food, corn and flour tortillas, and Mexican baked pastries and bread. In the early years El Aguila relied primarily on retail customers. In 1959 the Chisum's purchased the first corn and flour tortilla manufacturing equipment in central California.
