The long wait for Spring in the northern Fruitlands is almost over after a winter that came and went at will. It arrives with a vengeance early in December, took a sabbatical in January and returned with a renewed sense of purpose in February: blanketing the orchards with deep, protective snow just before a late cold snap transformed our mercurial bay into a vast white plain of ice to the horizon.

But now, as always, we grow nostalgic for Spring to come, for a warm breeze to blow the frozen desert out of the bay, revealing living water to a blue sky. Soon pungent patches of verdant ramps and surreptitious black morels will rise up in the hardwoods amount carpets of dappled trout lilies, spring beauties and shockingly white trilliums. And then the orchards will bloom, and their fruity perfume will drift across the hills and so many reliable miracles will resume.

At American Spoon we still seek out those uncommon fruits with flavors worth preserving. We hand-peel luscious, ripe Red Haven Peaches to harvest their melting flesh for our Peach Preserves and Cherry Peach Salsa. We receive all of our strawberries from the only farmer we know who still grows (just for us) the fragrant, but fragile variety called Early Glow we've been faithful to since our founding.
