Edith Gazzuolo has worked as a professional garment designer, researcher and consultant to the apparel industry for the past 30 years. In 1983, she founded her own consulting firm: Gazzuolo & Associates. She has also taught a variety of college courses at Indiana University, the College of St. Benedict, the University of Minnesota, and the Minneapolis College of Art and Design, where she was a full-time faculty member for ten years. In 1991 she co-founded Clarity Fit Technologies, Inc. serving 11 years as Director and Chief Technology Officer. She was honored in 2000 by the College of Human Ecology, University of Minnesota as one of their Centennial 100. Her experiences as an entrepreneur, researcher, and corporate director continue to guide her efforts for Cocina deVega, Inc.

Most of his life, Jim Byrd has worked in restaurant management including “front of the house,” executive chef, and business manager. He has culinary arts certification along with a BA in business. He has worked with several hotels and country clubs around the country such as the Hilton, Sheraton, Ramada, and Hyatt Regency, as well as WA Frost in St. Paul, Minnesota. In 1999, while working as a consultant to local restaurants, he began to develop the Twin Cities Dining Guide, a web site that now has 250,000 unique visitors a month and is steadily growing. Cocina deVega grew out of his love of cooking and exploration of new flavors. When he found the mesquite products, he fell in love with them. So much so he and Edith Gazzuolo bought Promez, LLC, the founding company of mesquite products. He incorporated the mesquite meal into a wide repertoire of beloved recipes and eventually threw away his wood chips in favor of the mesquite BeanPods™. Cocina deVega, Inc. fulfills a long-held dream of working with innovative and exciting new food products imported from Latin American countries.
