- HudsonValleySmokehouse.com is the newest chapter to a story that began some 25 years ago, here in the historic Hudson Valley of New York State. It all started when Tom and Katherine Gray opened a small retail shop at their home in Patterson, New York. Long days and a meticulous smoking process produced wonderful gourmet meats, cheese and fish. It wasn’t long until the Grays were operating one of the best wholesale smokehouses in New York.
