Dave Ramirez, former Sous Chef for New York's highly acclaimed Chanterelle, has been cooking for most of his life and is proficient in a broad range of cuisines from around the world. In addition to Chanterelle, his 10 years of New York City restaurant experience includes stints at Arcadia and the Great Jones Cafe. In 1999, Dave began teaching classes at the Institute of Culinary Education, where he remains a Chef Instructor in both the Career Culinary and Recreational Divisions
Dave has an ongoing relationship with the C-CAP high school career culinary arts program as a guest instructor and competition judge. In 2003, he was invited to be a featured chef at the Boa Mesa food festival in Sao Paulo, Brazil. Dave is a member of the Slow Food organization and is an avid, organic home gardener. He is partial to chile peppers and currently grows over 30 varieties.
