Everyone knows about New Orleans and Mardi Gras, etc., and now the word is out about Cajun culture too. The Cajuns settled in Louisiana in the 1600's (?) after their expulsion from Canada. They brought their French language and "love of life" with them. Lafayette is the Hub City for many festivals and industries featuring the music and food of this tradition. We have the second largest Mardi Gras celebration in America.
