- Ainsty Farms Direct (AFD) was formed as a co-operative of six local livestock farmers in 1998, to sell their own produce directly to the consumer through farmers markets and local deliveries. Although this system worked well, the need and demand for a retail outlet was soon identified.
- In Summer 2001 premises were obtained near Green Hammerton on the A59. This coincided with founder AFD member Sam Blacker's decision to give up farming and to take up the running of AFD with the assistance of fellow founder member and farmer Stuart Beaton.
