Las Casuelas Restaurants have a long and proud heritage. In the city of Mazatlan, Mexico, founder Florencio Delgado's grandmother prepared wonderful dishes and perfected recipes to hand down to her children. Using these same recipes, Florencio's mother prepared and served meals to townspeople from her very own kitchen in Arizona. Later, this small "restaurant" became known as the Spanish Kitchen, and became the forebearer to the Las Casuelas Restaurants. From these humble beginnings, Florencio and Maria Delgado opened the original Las Casuelas. Florencio and Maria's son Robert and wife Lisa Delgado now carry on the tradition with Las Casuelas Quinta. Las Casuelas has become a local institution and has grown along with the Coachella Valley.
Las Casuelas Quinta blends the tastes of colonial Mexico with contemporary California in traditional Las Casuelas style.
