- In 1980 Carmen along with her family moved from the city of La Puente, and settled in Apple Valley. Carmen continued to commute to her restaurant which she owned and operated since 1966 in the City of Industry. Carmen also at one time operated three restaurants in the San Gabriel Valley in the 1970's. Carmen always looks for opportunities even to this day, and she saw one in 1981. Carmen had been selling food at the Victorville home show on the weekends. She received favorable comments on her food, and many people asked "Where is your restaurant?". She had foresight to see a customer base forming. Carmen decided then it was time to open business in the high dessert. Carmen soon sold her business down the hill, and found this present location where La Casita still stands today. Carmen along with her late husband Alfred, and her children opened on June 5th 1981. During this time her business has gone through two room additions, and numerous make-overs.
