Before you even begin to start making your own hot sauce recipes, it’s important to know what sort of heat you want you want to get from your sauce. Peppers get their heat from capsaicin, and that’s measured by using the Scoville scale. I’ll discuss the Scoville scale in another post, but for now let’s just have a quick run down of what sort of peppers produce what sort of heat.
